I recently fell off the wagon too and am now once again steeping myself in X-Men lore. I stopped many years ago when the number of X-books mushroomed to the extent that I didn't have time to read one weeks' new issues before the next lot came out and, because they were so interrelated, it really was all or nothing and I chose nothing.
Still feeling my way a bit with the current range. Both Ultimate and New I agree are pretty good for the reasons you cite but maybe I'm just too set in my ways from too many years reading Claremont's stuff but I find Uncanny and X-treme to most to my taste (of course, it probably doesn't hurt that Claremont's writing the latter).
Also busy acquiring graphic novels (ie Magneto, the New X-Men ones, X-Treme X-Men etc) to get back up to speed on continuity...
